Homemade Hipster Breakfast

Call me basic but I still love this trendy toast. As much as I love sweets, this savory combo makes it hard to resist. It’s easy, cheap and satisfying.

Complex carb, healthy fats and protein all on one slice of heaven. Relax on a Sunday and have your self some fancy toast and a french press. Probably the easiest recipe that you will ever come across, and the most Instagram worthy!

Nutrition Info:

Eggs: It’s a never ending debate however I love eggs as a protein source! One egg has only 75 calories, 7 grams of high-quality protein, 5 grams of fat, along with iron, vitamins, minerals, and carotenoids. I’ll take it.

Avocado: One-third of a medium avocado has about 80 calories and contributes nearly 20 vitamins and minerals, making it a great nutrient dense food choice. The avocado is virtually the only fruit, yes I said fruit, that contains heart-healthy monounsaturated fat (the good kind)! Avocados are naturally sodium, sugar and cholesterol free. Mash them in a bowl and put the leftover avocado in a avocado saver.  Amazing invention!

Whole Grain Toast: I personally like Dave’s Killer Bread thin sliced. The whole food ingredients including nuts, seeds and oats makes it an excellent grain option!

Ingredients

  • 2 Scrambled Eggs
  • 2 Tbsp Diced Onion
  • 2 Tbsp Diced Peppers
  • 4 Cherry Tomatoes
  • 1/2 Small Avocado
  • 1 Slice Whole Grain Bread or toast of choice
  • 1 Sprinkle Red Pepper Flakes

Instructions

  1. Mix eggs with diced veggies in small bowl and scramble on medium heat.
  2. Mash avocado in small bowl.
  3. Toast bread.
  4. Layer mashed avocado on bread and top with scrambled eggs and diced cherry tomatoes. Sprinkle red pepper flakes on top.
