Fire Up the Grill for these Killer Kabobs
Need an easy healthy summer BBQ food option? Try kabobs!
A few servings of flavorful veggies are more fun on a stick! Start up the grill, for a quick healthy meal! Kabobs are an easy way to change things up. Aren’t the colors beautiful? These chopped veggies and meat chunks are always a crowd pleaser. BBQ doesn’t have to be hotdogs, hamburgers and chips.
Even during cold weather kabobs are doable, they only take 15-20 minutes. It’s worth braving the weather. Perfect for summer cookouts and family events. It meets most people’s diet restrictions and if you’re looking for a carb to pair with it, roasted corn or potatoes would be my suggestion!
Dessert Tip: Throw some fruit on the kabob skewers for dessert. Grilled pineapple and peaches are delicious. Maybe even a mini scoop of ice-cream to top it off!
Sweet Potatoes: are a root veggie containing many benefits including vitamin A, vitamin B6 and vitamin C! Great vegetable to boost immunity and eye health.
Peppers: is another veggies packed with fiber, vitamin A and C which are nutrients linked to heart health.
Onions: Onions are high in vitamin C, a good source of fiber, and with only 45 calories per serving, add abundant flavor to a wide variety of food. Onions are sodium, fat, and cholesterol free, and provide a number of other key nutrients.
Lean Red Meat: protein, iron and various B vitamins!
- Preheat oven 400 F. Microwave potato for 1 minute and 30 seconds. Dice potato, drizzle small amount of olive oil, add a pinch of salt and pepper. Place in oven for 15-20 minutes.
- Cut zucchini, onions, and steak into large chunks. Put vegetables in bowl, add olive oil and spices. Place on skewers.
- Grill at 300 F for 15 minutes or until meat cooked to preference.
