Let’s face it, squash can be boring without a little something extra.
The best way to enjoy squash is…by stuffing it with delicious flavors! This recipe has a hint of Italian and savory seasonings. It’s an easy weeknight meal and tasted great as leftovers the next day. Zucchini boats are colorful, filling and fun!
Zucchini: contains water making it lower in calories and carbs but is high in essential nutrients like potassium, manganese, and antioxidants like vitamin C and vitamin A.
Spinach: is often referred to being a “superfood” because it’s extremely nutrient-rich . It contains high amounts of carotenoids, vitamin C, vitamin K, folic acid, iron, calcium and fiber.
Tomatoes: are a also a good source of micronutrients including vitamin C, potassium, vitamin K and folate.
- 3 zucchini
- olive oil spray
- 1/2 lb. Italian sausage
- 1/2 lb. ground meat of choice
- Italian Seasoning, Salt, Pepper
- 1 can of Rotel (hot or mild)
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 cup spinach, chopped
- Salt, Pepper, Red Pepper Flakes
- Shredded mozzarella
1.) Pre-heat oven to 400 degrees.
2.) Cut zucchini lengthwise in half. Scoop out the middle with a spoon.
3.) Place zucchini boats in a glass pan, spray oil lightly on zucchini and season with salt, pepper, red pepper flakes.
4.) On medium-high heat, in a large pan cook Italian sausage and ground meat. Add rotel, onions and garlic, salt, pepper, Italian seasoning. Cook until veggies are soft. Add the spinach and continue to cook until wilted.
5.) Stuff zucchini with the meat and veggie mixture. Lightly sprinkle mozzarella cheese on top.
6.) Bake stuffed zucchini for 30 minutes or until zucchini is soft.
